Kendall Farms Creme Fraiche at Provencal

Brought Kendall Farms Crème Fraiche to Provencal Bakery & Café in Middletown, RI today.  They are hoping to incorporate Kendall Farms Crème Fraiche into a few of their recipes.  Today we made a Chicken  Broccoli Alfredo - just delicious.  Simple fresh ingredients, broccoli, chicken, Kendall Farms Crème Fraiche, parmesan cheese, salt & pepper to taste!

So what's an emulsion?

Okay, Okay....I heard you, you want to know, what is an emulsion? In the culinary arts, an emulsion is a mixture of two liquids that would ordinarily not mix together, like oil and vinegar.  There are 2 kinds of emulsions, temporary and permanent.  A simple vinaigrette is an example of a temporary emulsion, while mayonnaise is a permanent emulsion. CHOCOLATE, however is a less obvious emulsion, but nonetheless an emulsion of milk and cocoa butter.  So, there you have it!  Now you know what an emulsion is!

So, decided to make chocolate mousse - did you know chocolate is an emulsion? 
I know, who knew?? Okay, I am sure some of you knew -but not to worry after we ruined our beautifully melted chocolate by adding the instant coffee - we saved it by adding some Kendall Farms Crème Fraiche!  Sent a photo to my aunt to show off our masterpiece... she literally typed the word "sigh"....apparently I didn't whip it enough, she said it looked "soft", though she said the photo was lovely.  Well, I did what any mother would do....I blamed my 8 year old daughter ;)

Here it is anyway... I will make it again, and whip it longer this time!
